Orange-Strawberry Popsicles Covered with Dark Chocolate

It is summer! Let`s get together for some long walks in the forest on small trails surrounded by trees with hundred different shades of green, and enjoy nature`s complete silence only interrupted by the distant sound of bells from grazing sheep and the talkative and bubbling small creeks. On our way home we can pick seven different kinds of flowers, put them under our pillow, and dream about the person we are going to marry. Bright yellow buttercups, beautiful wild chervil and pink fireweed. Purple violet, thiestle and wood cranesbill, and the beautiful oxeye daisy. Let`s bike to the lake for an early morning dip that is cold and crisp, and finish it of with a huge picnic. And what about a serious BBQ get-together, with grilled veggies and tasty vegan burgers? Let`s do this people – where do we meet?

This summer I am ready to enjoy every ray of sun there is, and if there is none, I will dance and sing in the rain until my feet are cold and covered in mud. I`ll eat sun-warmed strawberries, blueberries and raspberries, and make fresh herbal tea with thyme and clover. And of course, last but not least, I´ll eat lots of ice cream and popsicles, and if my instinct is right, I am not alone on this one. Few things can measure up to some cool and tasty, fresh and light mouthfuls of summer flavored pops. I am of course not talking about the sugary stuff you get in the kiosk. As always, I want what I bring into my body to be vibrant, healthy, and filled with natural flavors. So let`s get on it – the sooner, the better!

These popsicles are a healthy remake of the traditional ”Lollipops” that are so popular in Norway. One layer of strawberries and another of orange juice, partly covered with delicious dark chocolate. That is summer for you right there! I will have mine while chillin´ in the shadow of the large and beautiful oak tree that I´ve climbed in since I was a child, while enjoying a good book.  Trust me – you´ve got to try it!

Personally, I am so in love with these pops. Not only are they completely healthy and filled with nothing but natural goods, they are also amazingly delicious, fresh and Oh So Cool! To top that off, they are also great fun to eat! I love colorful food, and I know my body does as well! The color of your food is in fact an indicator of how healthy the food is. Colorful food contains phytonutrients that is good for the brain, and the golden rule is; the more colorful the food is, the greater the brain booster. I guess my brain function will enhance quite a bit this summer, because these pops will not be left alone…

Orange-Strawberry Popsicles Covered with Dark Chocolate

The Pops

2 oranges

1/2 basket of ripe strawberries

 

The Chocolate

2 tbsp (50 gram) coconut oil

5 tbsp raw cacao powder

1-2 tbsp maple syrup

Water

 

Juice the oranges, and fill the popsickle mold ¾ to the top. Freeze. After the orange juice is completely frozen, blend the strawberries (do not juice) and add to the molds. Freeze again. Make the chocolate by blending the coconut oil, cacao powder and maple syrup. Chocolate making is intuitive cooking, and depends highly on your own preference. If you like your chocolate sweet, add more of the maple syrup, if you like it dark and bitter, add less. Carefully blend in water until the chocolate is liquid enough to be dipped into. Remove the popsicles from the molds, and dip them into the chocolate. At this point, the pops can refreeze, or be eaten immediately.

    Så enkles disse var å lage. Har kjempelyst til å prøve meg på de, og burde kjøpe slike is-former nå i sommer, det er jo så utrolig mye man kan lage i de.
