Woaw, it has been a while! The past weeks I have been sleeping and drowsing in bed, trying to rid myself of both the mono and a bacterial infection, and I have not been in a bloggable mood. However, I am definitely back in business now – ready to start posting some delicious vegan recipes again, and to rebuild my strength! And what better way than with some of these golden Mango Hemp Goji Energy Balls!? These vibrant, orange balls are packed with healthy nutrients and they taste absolutely amazing! Additionally, they are made in just a few minutes!
Before I continue with the recipe, however, I want to give you a heads up about an amazing norwegian band! They are called Comet Kid, and they are recording an album as we speak. I think it is so important to support up-and-coming artists of all kind – especially when they are not only amazingly talented, but also really nice and friendly guys! Ok. Back to the mouth-watering energy balls! The amazing mango has been a subject of ongoing admiration on this blog, and although I don´t want to repeat myself unnecessary, I will say that; YES – the mango taste amazing and YES – it is incredibly good for you!! One cup provides about 80% of the daily recommended value of vitamin C, 25% of vitamin A and 10 % of vitamin B6, vitamin E and vitamin K. Combined with the hemp seed, that contains all the essential amino acids, a balanced ratio of omega 3 and 6, vitamin E as well as lots of fiber, and the cashew nut, containing protein, vitamin K, copper, manganese, iron, selenium and magnesium amongst others, this snack is almost too good to be true! Add the goji berries to the mixture and we are definitely down to business! The goji berry are known as a superfood. No wonder looking at its nutritional profile. The berry is not only a rich source of antioxidants, it also contains several vitally important amino acids as well as high amounts of potassium, iron, zinc, calcium and vitamin B. What´s not to like?
If you want to treat your body to some high-energy snacks, this recipe is a must try! Not only are the energy balls packed with healthy ingredients, but as stated earlier they also taste absolutely incredible. The mango complements the goji berries perfectly, and the fruity combination of the two works amazingly well with the more earthly tasting hemp seeds. Blend in the mild cashew nuts, the sweet dates and the coconut oil, and we reach perfection! The balls are excellent for long hikes, as a pick me up after a long day at work, or as a general strengthener.
Mango-Hemp-Goji Energy Balls
100 grams cashew nuts
100 grams dried mango
100 grams dried goji berries
50 grams hemp seeds (without shell)
75 grams dates
1-2 tbsp coconut oil
Using a food processor, start by blending cashew nuts, dried mango and goji berries until everything is quite pulverized. Add the dates and coconut oil, and blend. At last, add the hemp seeds and blend shortly. Roll the dough into small balls and let them set in the fridge for about 30 minutes. The balls can be stored in the fridge for up to a week. They can also easily freeze.
