Homemade Granola

Good morning, beauties! This week I have an amazing recipe for you! It is so incredibly tasty that after making this I literally ended up having this for breakfast, lunch and dinner one day! The recipe is very versatile, and can be eaten plain as snack, or together with nut-milk, soy-milk, soy yogurt, coconut yogurt, chocolate chia pudding or chocolate avocado pudding. The only thing limiting you is your own imagination!

This granola is packed with all kinds of healthy ingredients, making sure you get the best start possible to your day. There really is nothing better than starting the day eating clean and energy-packed food. Your body wakes up to a new beginning, ready to serve you in every way if given the right fuel. A healthy morning increases the chances of more healthy choices throughout the day, so keep it simple and delicious!

The recipe is fairly easy to make. Blending everything together might take about 15 minutes, but you have to set aside some time to stay close to the oven. The time it takes is totally worth it though, because I can guarantee that you will love this recipe! Also, the granola is perfect as a gift! I made it as christmas gifts for my siblings last year, and they absolutely loved it! Not all gifts have to be expensive – in my opinion, the best ones are the gifts given thought, time and love!

Granola

Dry ingredients
6 1/4 cups (1,5 liter) oats
1 3/4 cups (4 dl) almonds
3/4 cup (1,5 dl) sunflower seeds
1/2 cup (1 dl) pumpkin seeds
3/4 cup (1,5 dl) sesame seeds
1 cup (2,5 dl) dried shredded coconut
1 1/4 (3 dl) raisins
1 cup (2,5 dl) cranberries

Wet ingredients
2 bananas
100 grams dates
3 tbsp coconut oil
1 tsp cinnamon
4/5 cup (2 dl) fresh apple juice

Directions
Preheat the oven to 180oC Blend all the dry ingredients in a big bowl. Blend the wet ingredients separately, using a food processor. Pour the wet ingredients over the dry ingredients and blend everything using your hands. Make sure that all the dry ingredients are moist when you are finished. Spread the mixture on a baking tray (you don´t have to cover it with oil or baking paper). Place in the middle of the oven and bake for about 1,5 hour. Make sure you blend the mixture around on the tray every 15 minutes or so, using a large spoon. The blend might be a little moist when you take it out of the oven, but if you let it cool completely it will turn out crisp and delish.

      I have had mine for a week only, because I love it to much to let it alone :P However, my brother had it for about 3 weeks after christmas last year, and it still tasted great :) Just remember to let it cool completely before you store it in the jar…Have a great day :)

    Så lurt å bruke bananer og dadler som søtning også. Tror faktisk aldri jeg har sett en oppskrift med det før.

    Nam, det hørtes veldig godt ut bruke banan i. Har kun laget granola 1 gang før, og da gikk jeg og småspiste på den hele tiden siden det var så godt. Denne oppsrifta må jeg teste ut. Genialt å gi det bort som gave. Veit ikke helt hvem jeg skulle gitt det til da :) Hm.. Går alt bra med deg? <3

    A truly amazing granola with an explosion of taste in every bite! Perfect for a quick and healthy morning snack! … and evening snack.. and night snack.. The only not-good thing with this granola is the fact that you’ll eat it all in a very short time. Then again, you can always make more.. :)
