Fruit Popsicles with Coconut Water




I don´t know how the weather has been in the rest of the world, but in Norway the sun has been sending its waves of warmth and light down on us for the past few weeks. The newspapers are telling us about the best summer in years, and I can´t do anything but agree!

Between night shifts at the local nursing home I have been eating rawlicious food and pouring down juices filled with pure life force, while soaking in the sun. I have been meeting up with old friends and making new ones, running around the lake close by, and finishing it off with a swim, nourishing my body with salty water in the sea, and eating as many strawberries as I have been able to fit in my increasingly berry-protruding stomach. Sounds like a good summer? You bet!





When the weather is as perfect as it has been this July, there is no place more awesome than Norway. I am sure anyone of my Norwegian readers who made the lucky choice of staying at home (Norway empties out in the summer. You will find quite a few of us in the south of Europe) would agree! If you are out travelling or live outside of Norway – get your gorgeous groovy selves here! I will be waiting for you with a badge full of berries and a cooling summer drink! If you hurry, you might even get to taste one of these awesome popsicles – they alone are worth the trip!





Actually, I would go as far as to say that there is really no better way to celebrate the magic of summer than with some of these amazingly delicious and fresh popsicles. They look like small pieces of art, are incredibly fun to eat (your children will love them, I guarantee it), and taste soooo good!! I decided to pair the fruit cocktail with coconut water, and the result excelled my (high) expectations by far.




The cool thing about coconut water is that it is naturally isotonic, meaning that the electrolyte levels are the same as found in the human body. In fact, it is the only liquid found in nature that has been used intravenously (during World War II, when they lacked blood for transfusions). The pure liquid from the Tree of Life will work wonders if you need an extra refill of energy and pure goodness. It is the ultimate after-workout drink as it is hydrating and will re-stabilize the salt balance in your body. Additionally, it is said to have anti-aging and anti-carcinogenic properties and to be superb for the skin.

The list of ingredients is more of a suggestion than an actual list of ingredients. The basic rule of this recipe is that there is no rule. You can combine any fruit or berry you would like, just make sure you peel the ones that are necessary peeling. Other than that, it is up to you. My favorites, however, are the ones listed above. Put them in the popsicle molds and pour over coconut water. Freeze. Enjoy. Summer only comes around once a year, so be sure to make the best of it.

    Du har så rett; norsk sommer er det fineste som finnes. Og denne sommeren synes jeg virkelig har tatt av. Kan ikke huske sist vi hadde en så bra en. Jeg nyter hver dag iallefall- og det høres det ut som du gjør å! :)
    Så fiiine disse var. Og helt sikkert gode også- elsker kokosvann. Men har ikke tenkt på å bruke det til is. Supersmart og hydrende i sommervarmen!

    Disse ser helt fantastiske ut 😀 Jeg får faktisk lyst til å løpe på butikken og kjøpe ingredienser med en gang. Så etter kokosvann nå, men de hadde det ikke. Jeg trur jeg skal gå en liten tur rundt her jeg bor, for å lokalisere hvor jeg får kjøpt diverse ting. Sommeren i Norge har vært utrolig bra 😀 I går regna det veldig mye her i Stavanger, men det er det vel bare å vende seg til. Håper alt er bra med deg. Stor klem fra meg <3
