After a lot of trying and tasting I have come up with a complex, smooth superpudding filled with vitamins, omega 3, antioxidants, proteins and healthy fats. To add to the perfect, it is a chocolate pudding, and that sums it all up. Who wouldn´t like to start the day (or finish it for that matter) with a rich and flavory chocolate splurge that at the same time boost your energy and makes you glow with health? I know I would!
The nice thing about this recipe is that you can leave out or add almost anything you like, and it will end up amazing. If you lack some of the ingredients, don´t sweat it. I have tried this recipe in almost any version there is, from the most basic to the power pudding I am presenting here, and every time I have ended up in awe. This is the fun and exciting thing about raw recipes, it is so many ways to make a dish, and if you get creative you will never end up with the same result. Of course, the more ingredients you add to the mixture the more powerful and nutritious your pudding will become.
Chia is the main ingredient, so this one you should not leave out. The seeds are what makes the pudding texture. Chia is an amazing seed, as I am sure many of you already have discovered. Highly valued by the ancient Aztecs and Mayans because of its energizing properties, chia is a great source of omega 3 and 6, as well as proteins and minerals such as calcium, potassium, phosphorus, sodium and zinc. To list all of its benefits would take a long time, and I am sure you get the picture. To put in short, it is not for nothing that the chia seed is listed as a superfood. As well as being a great energizer, chia also regulates the digestion and inhibits dehydration. What´s not to like?
In addition to chia the pudding consist of hemp seeds (containing not only fiber and protein, but also the life important omega 3 and 6), cacao (don´t even get me started on praising this one…), bee pollen (another amazing superfood filled with loads of proteins, vitamins and minerals) coconut oil (the health benefits of this one is endless) and different seeds and nuts filled with proteins, vitamins and healthy fats.
To sum it all up; this is a life-force-booster-high-energy-crazy-delicious-raw-vegan-power-pudding!
Chocolate Chia Power Pudding
2 tbsp chia + 1/2 cup (1 dl) water
2 tbsp hemp seeds
2 tbsp rolled oats
2 large dates
2-3 tbsp raw cacao powder
1 tsp bee pollen
1 tsp coconut oil
a handful of nuts (I use almonds, walnuts, brazil nuts and hazelnuts)
a small handful of seeds (I use pumpkin seeds and sunflower seeds)
Begin by making a jelly out of the chia seeds and the water. You do this by adding seeds and water into a little bowl or a cup and let it set for about ten minutes, stirring every other minute or so. Add more water if necessary. When the mixture is thick and pudding-like, add the rest of the ingredients to the bowl and use a hand mixer to blend it all together.
Serve with chopped nuts and different berries, for example blueberries and raspberries.
I really hope you will come to love this recipe as much as I do. And remember, the pudding does not have to be as fancy as presented above. If you lack bee pollen or some of the seeds, add something else instead, or leave it out.
