Watch out and make way!
This recipe is one of the few, and it is sure to wake up your taste buds. It is simple (all you need is a knife, a cutting board, and preferably a food processor or a hand blender) it is quick (it took me about 15 minutes including clean-up), and it is sooo yummy!! Really, after eating I just sat speechless, with chills going down my spine, having trouble understanding how something so good can be so healthy at the same time. If you are new to the whole raw concept, this recipe is a good way to start.
This recipe is enough for two light eaters, or one very hungry person;
Amazing Raw Pasta with Heavenly Tomato Sauce
6-7 small tomatoes
4 sundried tomatoes
1 clove of garlic
1 big date
2 broccoli florets
2-3 tsp dried or fresh basil
salt and pepper
a little bit of water
2 small tomatoes
I made the pasta using a Norwegian cheese slicer, but you can also use a regular vegetable peeler. There is not much to it really, all you have to do is make thin slices of the zucchini, and then cutting it in thin shred-like bites. When you are done, let the pasta rest and start making the sauce…
Make the sauce by adding the ingredients in a food processor or in a bowl using a hand blender. If you don´t have a blender or food processor, you could of course just use a knife, but be aware that the result will be more like a vegetable mix than a sauce. Also, if you lack any of the ingredients, do not panic! Just add some more of one or two of the other ingredients, and you´ll be fine! It´s all about finding that creative mood and experimenting a little. And if all goes wrong, take comfort in knowing that nothing makes the learning curve steeper than trying and failing a few times…
When the sauce is made, and you are happy with the result, it is time to mix the pasta with the sauce using your hands or a big spoon.
Cut the avocado and the small tomatoes and present everything on one or two plates. And you are done! It really is as easy as that.
