A Pint of Sunshine, Please! – Mango Pineapple smoothie

Who wants a pint of sunshine? I sure would not turn down the offer, and this smoothie is as close as you will ever get! This is like candy for every mango lover out there, and from my experience I know there are a few…Who can blame us though, for loving the King of Fruits? It is truly divine, as is this smoothie. In truth, I adore everything about this smoothie, the color, the taste and the way it feels in my mouth. It is most definitely a blend of sunshine and summer in a glass…

Simple, healthy, filling, smooth and insanely delicious – that is what I call a summer treat! This smoothie works anytime of the day, and would be perfect as a breakfast or lunch. I have written about the health benefits of the mango in the post with the Mango Thai Salad of the Century (if you haven´t tried it yet, you definitely should – it is amazing), so head over there for some mango history and health benefit education. Personally, I can not get enough of the Mango. The flavor is definitely on my top 10 list, and I feel so privileged and grateful to be able to enjoy such perfection. Wouldn´t you?

I have added the pineapple to make it a bit more liquid, and it also adds to the tropical feel, but you will not taste it explicitly. If you don´t have pineapple, or are allergic, apples will probably work just as well. Also, the pint is perfect for sharing. Add a few straws and share the sunshine and warmth – there is really no better way of enjoying it.

Mango Pineapple Smoothie
A pint of sunshine

¾ pineapple (about 4 dl/1,5 cups fresh pineapple juice)
1 mango

Juice the pineapple. Add the pineapple juice to a blender together with the flesh of the mango, and blend. If it is too thick for your taste, add more pineapple juice. Alternatively, you can blend both the pineapple and mango together with some water. This is probably the preferred way of doing it, because it means less dishes.

Best served: Outside, chillin` in the sun.

    Så herlig! Elsker mango-fargen, den er liksom så glad! Og mango er jo så GODT!! Jeg elsker spesielt de pakistanske/champagne, men er de “vanlige” i sesong/bra, er de supergode de også :)
    Skal prøve meg på denne med ananas, sikker veldig frisk. Min favoritt, tror jeg er en med fersk mango, gojibær og fersk limesaft- såå godt!

      Helt enig – blir bare så glad av mangofargen, den er helt herlig :) De pakistanske er utrolig gode, men har faktisk ikke noen preferanse, liker de “vanlige” like godt :P Mmm, goji, lime og mango MÅÅ jeg prøve – høres fantastisk godt ut! Tusen takk – god kveld til deg også <3
